Disclaimer: I am NOT a baker. I actually HATE to bake, but these are so super easy to make and almost impossible to mess up that I end up making them at least once a week! This post is my version of the recipe. Original recipe can be found here.
1.5 cup quick oats
2 ripe bananas
1/3 cup peanut butter
1 TBS chia seeds soaked in 1/3 cup water* (this is my addition to the recipe)
1 Tsp Vanilla
1 Tsp Pumpkin Pie Spice (you can use Cinnamon, Nutmeg, or another spice of your choice)
Optional add-ins: raisins, mini dark chocolate chips, coconut flakes (this will alter the nutrition info slightly)
Preheat the oven to 350 and spray a cookie tray with nonstick spray. Let the chia seed and water mixture sit for a few mins so they can set while you start mixing/mashing all of the other ingredients together. Add the chia seed mix and mash well with other ingredients. Spoon mixture onto the cookie sheet. You can set them close together because they don’t spread when they cook. (I usually get 12-15 out of my batches depending on how big I make them.) Bake for 12-15 mins turning the tray halfway through baking.
