Oatmeal Protein Breakfast Cups

1 1/2 cups of oats
1/2 cup of shredded coconut
1/4 cup maple syrup or honey
1 tsp cinnamon
1/4 cup coconut oil
1/2 scoop of vanilla protein powder (I used Amazing Grass)
1/8 cup flax seed


Melt honey and oil and mix with dry ingredients. Use a muffin tin and shape into cups. Bake at 180 degrees for 15 minutes (or until golden brown). Fill with your favorite Greek yogurt and fruit. Enjoy!
