1/2 cup each Red, Green and Orange bell pepper chopped in long slices
1/3 cup red onion, chopped
1 cup button mushrooms, chopped
1/2 tsp each dried or fresh basil, oregano and garlic powder
1/4 tsp sea salt
Your favorite pizza sauce or you can make it this way:
1 15 oz can tomato sauce
1/2 tsp each dried or fresh basil, oregano, garlic powder, granulated sugar
Sea salt to taste about 1/4 tsp
1/2 cup vegan parmesan cheese (recipe below)
Red pepper flake & dried oregano
Vegan Parmesan Cheese
How to make Vegan Parmesan Cheese with only 4 ingredients:
3/4 cup raw cashews
3 Tbsp nutritional yeast
3/4 tsp sea salt
1/4 tsp garlic powder
Add all ingredients to a food processor and mix/pulse until a fine meal is achieved. Store in the refrigerator to keep fresh. Lasts for several weeks. I used this on my vegan pizza I made, but you can use it on tops of pastas too!! My husband loved it!!
Yields enough dough for two 13 by 18 inch pies
Bread Flour 3 3/4 cups
Active Dry Yeast: 2 1/2 tsp.
Table salt: 3/4 tsp.
Sugar: 3/4 tsp. plus a pinch
Room temp. water (72 degrees F): 1 1/3 cups
Olive oil for the pans
In a medium bowl, stir together the flour, yeast, salt, and sugar. Add the water and, using a wooden spoon or your hand, mix until blended, at least 30 seconds. The dough is a bit stiffer than most of the others in this book, not as wet and sticky. Cover the bowl and let sit at room temperature until the dough has more than doubled in volume, about two hours.
Oil two 13 by 18 inch rimmed baking sheets (or pizza pans/stones of your choice). Use a bowl scraper or rubber spatula to scrape half of the dough onto an oiled pan in one piece. Gently pull and stretch the dough across the surface of the pan, and use your hands to press it evenly out to the edges. If the dough sticks to your fingers, lightly dust it with flour or coat your hands with oil. Pinch any holes together. Repeat with second piece.
At this point I let it rise a little again, maybe a half hour or so, and then put the toppings. I like to try different rising times and temperatures and see what works best for you. I usually bake it in the oven at a temperature of 425, but you can go up to 500.
Preheat oven to 425
Bring large skillet to medium heat, add 1 Tbsp olive oil, onion and peppers. Season with salt and herbs. Cook until soft and slightly charred-10-15 minutes, adding the mushrooms in the last few minutes.
Prepare vegan parmesan cheese
Top pizza with desired amount of pizza sauce, sprinkle parmesan cheese and sautéed veggies.
Bake for about 17-20 minutes
Serve with remaining parmesan cheese, dried oregano and red pepper flakes.
