Sweet Corn and Green Chile Baked Flautas with Homemade Salsa

✨1 tsp olive oil
✨1 cup chopped yellow onion
✨2 tsp chili powder
✨3/4 tsp cumin
✨1/2 tsp salt
✨5 cloves garlic, chopped
✨3 cups cooked pinto beans
✨1 can(4oz) mild green chiles
✨Juice of 1/2 lime
✨1 cup sweet corn kernels
✨12 flour tortillas

Preheat oven to 400 degrees. Coat a large baking sheet with cooking spray.

Heat oil in large skillet. Cook onions for 5 mins or until brown. Then add chili powder, cumin, salt and garlic and cook for 30 seconds and remove from heat.

Throw beans, chiles, and lime juice and mash until it forms a paste. Fold in sautéed onions and corn and stir.

Warm up tortillas. Grab 2 heaping tablespoons of filling and spread I left side of tortilla and roll tight. Lay seam side down on greased pan. Keeping going till you run out of filling or tortillas!
Lightly coat them with cooking spray and bake 10 mins or until the bottom of the Flautas turn brown, then flip and bake another 5-7 minutes.

I served mine with my homemade salsa!! Enjoy!
